Mini Banana Tarts: Healthy, Fresh, and Delicious

With just a few simple ingredients like ripe banana and oats, you can quickly make a nutritious crust. After a short time in the oven, fill them with creamy yogurt and fresh fruit for a light, sweet, and refreshing touch. Perfect for breakfast, a snack, or even a light dessert!

Ingrediënten (6 mini taartjes)

  • 1 ripe banana
  • 150 g Chocolate & Cranberry Organic Oats (KarmaKarma)
  • 1 tsp cinnamon
  • 2 tbsp honey
  • Natural yogurt or yogurt of your choice
  • Pear & blueberries, or any fruit you like

Instructions

  1. Preheat the oven:
    Preheat your oven to 170°C (340°F).
  2. Make the crust:
    Mash the banana and mix it with the oats, cinnamon, and honey until well combined.
  3. Fill the molds:
    Divide the mixture into small tart molds and press it down, creating a slight edge. No tart molds? Use muffin cups and build the edge a bit higher.
  4. Bake:
    Bake the mini tarts for 12–15 minutes, until firm and lightly golden.
  5. Cool:
    Let the tarts cool completely before filling.
  6. Fill and serve:
    Fill each tart with yogurt and top with fresh fruit such as pear and blueberries. Serve immediately or store briefly in the fridge.

Chef’s Tips

  • Add extra crunch by sprinkling some nuts or granola on top of the yogurt.
  • Switch up the fruit: strawberries, raspberries, kiwi, or mango work beautifully.
  • For extra sweetness, drizzle a little honey or maple syrup over the fruit before serving.
