Jollof oatmeal with spinach

Jollof is a popular West African rice dish, especially well known in countries like Nigeria, Ghana, and Senegal. It’s a one-pot dish in which rice is cooked in a spiced tomato sauce.

In the recipe above, jollof oatmeal is a modern, healthy twist where oats take on the same spicy, tomato-rich flavor as jollof rice.

Ingrediënten (2 personen)

  • 2 tbsp oil
  • ½ cup (about 120 gr) finely chopped onion
  • 1 tsp mild curry powder
  • ½ tsp turmeric
  • ½ tsp thyme
  • ½ tsp ground pepper / chili flakes
  • ½ can diced tomatoes
  • 1 cup rolled oats
  • Salt to taste
  • Handful of spinach

Bereiding

  1. Heat the oil in a pan and sauté the onion until translucent.

  2. Add the curry powder, turmeric, thyme, and chili flakes, and cook for about 30 seconds.

  3. Add the tomatoes and let simmer gently for 3 minutes.
    Toast the oats for a few minutes to bring out their flavor.

  4. Stir the oats into the tomato mixture, add salt, and let simmer for 5–10 minutes until everything is cooked through.

  5. Stir in the spinach at the end until wilted.

     

Tips

  • Top with feta, a soft-boiled egg, or extra vegetables.
    Feel free to experiment with other spices or add protein of your choice.
