Caramel Banana Oatmeal with Yogurt & Quinoa

Craving a healthy, sweet start to your day that tastes like banana bread? This oatmeal combines caramelized bananas with creamy oats, fresh yogurt, and crunchy puffed quinoa for a quick breakfast bowl. Perfect for cold mornings or as a nourishing snack.

Ingrediënten (1 portie)

  • 1 tbsp melted coconut oil

  • ±¾ tbsp brown sugar or maple syrup (optional, + extra to taste)

  • 1 ripe banana

  • ½ fresh banana, sliced (for topping)

  • ±1½ tsp vanilla extract

  • ½ cup rolled oats (±35 g)

  • ½ cup milk of choice + ½ cup water

  • Pinch of salt

  • 3–4 tbsp (plant-based) yogurt

  • 1–2 tbsp puffed quinoa

  • 1 tbsp chocolate shavings or chocolate chips

  • Optional: nuts

Instructions

  1. Heat the coconut oil and brown sugar in a pan. Add the banana pieces and let them caramelize on one side until golden brown. Add the vanilla and cook briefly.

    Remove the banana from the pan and set aside.

    In the same pan, add the oats, salt, milk, and water, and cook until the oats are creamy (±5 minutes).

    Stir half of the caramelized banana into the oatmeal.

    Spoon into a bowl and finish with:

     

      • a spoonful of yogurt

      • the remaining caramelized banana

      • slices of fresh banana

      • puffed quinoa for crunch

      • chocolate shavings

      • optionally some extra brown sugar and nuts
