Summer Cheesecake with KarmaKarma Granola, Blackberries & Blueberries 🍰

A cheesecake you can enjoy without guilt? Yes please! This summer cheesecake is fresh, light, and has a crunchy base made with our KarmaKarma Vanilla & Almond BIO Granola. Packed with red berries and a hint of lime for that perfect summer vibe!

Perfect for brunch, a birthday moment, or simply when you want to give yourself a bit of Good Karma.💛

Ingrediënten

  • 100 g KarmaKarma Vanilla & Almond BIO Granola
  • 150 g mixed nuts
  • 2 tbsp honey (or more to taste)
  • 2 sachets agar agar
  • 750 g low-fat quark 
  • 350 g mixed berries (blackberries, blueberries…)
  • Juice of 1 lime
  • 150 ml water

You’ll also need:

Baking tin with parchment paper, blender, spatula, small saucepan

Instructions

1: Make the base: Blend the nuts and KarmaKarma Vanilla & Almond BIO Granola until fine, mix with 150 ml water. Press the mixture firmly into your lined baking tin.

2: Bake for 15 min at 175°C (350°F) and let it cool. Then chill in the fridge for 15 min.

3: Heat the water, stir in the agar agar, and let it reduce briefly. Add the quark and stir until smooth. Mix in the lime juice and 4 tbsp honey.

4: Pour the filling over the base and smooth it out. Let it set in the fridge for at least 2.5 hours.

5: Top your cheesecake with the fresh berries right before serving.

Extra tips:

→ Craving extra crunch? Top with KarmaKarma Vanilla & Almond BIO Granola and a handful of roughly chopped nuts.
→ Let the cake set for at least 2.5 hours (or overnight) for the cleanest slices.
→ Want to make it vegan? Use a plant-based quark and swap honey for agave syrup.
