Pineapple Cups with Granola and Blackberries🐣🍍

Easter 🐣 isn’t just about chocolate eggs 🪺 for us — it’s also about enjoying good times together over a delicious breakfast. These pineapple cups 🍍 are the perfect spring surprise: fruity, crunchy, and creamy. Perfect for a festive brunch or a wholesome snack!

With just a handful of ingredients, you can whip up these edible mini bowls in no time. The natural sweetness of pineapple, the creaminess of Alpro Nature, juicy blackberries 🫐, and a crunchy topping from our Double Almond & Vanilla Granola — now that’s pure indulgence with a capital I! 😊

Ingredients (for +/- 12 pineapple cups)

✔️ 1 ripe pineapple
✔️ Plant-based yogurt of your choice — we use Alpro Nature
✔️ A handful of fresh blackberries (or other spring berries)
✔️ KarmaKarma Double Almond & Vanilla Granola

Optional: fresh mint or edible flowers 🌼

Preparation

  1. Preheat & slice: Preheat the oven to 100°C (fan). Peel the pineapple and cut it into thin, round slices (about 0.5 cm thick).
  2. Shape the cups: Gently press the slices into a muffin tin 🧁 (or similar round mold) to create a small bowl shape.
  3. Dry in the oven: Let the pineapple dry in the oven for 2 to 2.5 hours. The edges should curl slightly and feel firm, but still flexible.
  4. Cool & fill: Let the cups cool, then carefully remove them from the tin. Time to fill them with deliciousness!
  5. Finish it off: Spoon some Alpro Nature yogurt into each cup. Add a few blackberries and top with a generous crunch of our Almond & Vanilla Granola.
